To pad out the track selection Mario Kart Tour features different variants of certain tracks from time to time. These are R courses which are generally just the course played backwards with some minor changes, T courses which are filled with different trick opportunities and often include new geometry for the track and RMX courses which make huge changes to the original track and are basically new tracks altogether within the original's setting. There's also RT courses which are a mix of reverse and trick courses.
To give you an example here is the original N64 Kalimari Desert track-
Vs the new Kalimari Desert 2T featured in the latest Tour released today-
It's basically a new course with an entirely different route through the track. I think these are a great way to breathe new life into old courses and offer way more replay value than Mirror Mode ever did. I really hope Mario Kart 9 continues the trend.

Yeah I get that a lot of people don't like it, but there are multiple great ideas in it that I would love to see appear in a mainline Mario Kart. The combo system is great, having a weekly challenge to get the top score across a particular GP adds a lot of fun, I really enjoy the bonus challenges after each cup.
I think all of these features would work very nicely in a mainline entry in the series.

The combo system is cool but I'm not sure I'd want it in a mainline game. It works well in this game but makes every race feel like a score attack rather than an actual race.

There are so many things from MKT I want in mainline Mario Kart. The track remixes like you mentioned in the OP, the huge fanservice with the long desired Mario characters, the special missions at the end of every cup, and heck I wouldnt even mind the combo gameplay as a separate mode.

Maybe as a separate mode or something.

Well, racing along the path of the train on Kalimari Desert certainly is interesting.
Such things already exist in the main series. Mario Kart Wii had about 50 time-limited online "tournaments", some of them had you racing tracks backwards, racing on modified paths, racing on battle tracks, etc.
List of Mario Kart Wii tournaments
This is a complete list of Mario Kart Wii tournaments that were held on the Mario Kart Channel. Two tournaments were held each month, starting in May of 2008. The first tournament of each month lasted from the 1st to the 10th of that month, and the...

Mario Kart Tour has so many cool things that it would be a crime if they weren't in the next console one.

They just added King Bob-Omb in the game. I've always wanted him!
I'm tempted to try the game out but I've heard less than rave reviews.

I absolutely hate that this is online only. My kids want to play on a road trip but can't without a hotspot.
Super Mario Run is the same. Just let meturn it on. What if I'm on a plane?

They're neat, though I wish they altered the actual geometry of the courses a little bit instead of just plopping tons of these big ugly ramps everywhere
